Yogurt and It's Benefits

Yogurt is a very valuable food for it’s high content of high quality proteins, fats, carbohydrates, minerals (mainly calcium) and vitamins that satisfy much of the nutritional needs we have. It is difficult to find a single source so valuable to our dietary needs and it has the added benefit of being readily available, tasting good and cheap. No wonder so many call it the wonder food.

From the bacteriological standpoint, yogurt is the result of fermentation or acidification of milk due to two specific lactic bacteria: lactobacillus bulgaricus and streptococcus thermophilus. The lactic acid released by bacterial flora leads to a progressive decrease in the ph balance of milk which inhibits the proliferation of harmful bacteria and other organisms. When it reaches a certain acidity level, casein precipitates and forms a firm gel. It is at this state that the coagulation of milk proteins occurs.

Yogurt bacteria produce amino acids, proteins, vitamins and enzymes in greater proportion than those found initially in milk. This is the reason that yogurt contributes to the assimilation of other nutrients. The two bacteria used in the preparation of yogurt remain alive in it and therefore in our digestive organs as well. That means that the fermentation process keeps working inside our body and during this process lactose (milk sugar) is transformed into lactic acid.

The remaining parasitic microbes do not support this acidification which is the reason yogurt is recommended in the treatment of colitis and diarrhea because it is an excellent intestinal antiseptic. Yogurt is also ideal for those with lactose intolerance because the yogurt bacteria produce lactase, an enzyme indispensable for the assimilation of lactose in the digestive process.

One of the main benefits of yoghurt is the amount of calcium it contains as it covers 50% of daily requirements. It additionally contains phosphorus which helps the body assimilate calcium more effectively. Calcium is involved in the formation of bones and teeth and also assists in various different functions including:

  • blood clotting
  • regulation of the nervous system
  • muscle pain and cramping relief
  • metabolizing of iron in the body

Yogurt is low in fat content and ensures the appropriate level fat soluble vitamins. It also contains carbohydrates that are transformed into lactic acid which facilitate the digestion of yogurt.

Think about it – one food that contains protein, good fat, carbohydrates, sodium, potassium, calcium, phosphorus, magnesium, iron, fluoride, Vitamin A, B1, B2, B3, B6, C and E. I’d say that qualifies for it being named one of the best wonder foods available to us.
